We all know how satisfying a well cooked steak can be. If you’re a meat lover, there’s truly nothing like it. But then add some cheesy fries into the mixnow we're talking! We're showing you the Smoke Show version of Steak Frites (and cheese!).

 

HOW TO GET A PERFECT STEAK, EVERY TIME. 

In order to cook your steak perfectly every time, there are a few things you have to pay attention to. Taking precautions with these small steps is simple yet crucial. 

 

  1. Our number one tip for a perfect steak is to let it sit out until it gets to room temperature. Cooking a steak straight from the fridge is a recipe for disaster, causing uneven cooking, overcooking or undercooking. Letting it get to a neutral  before grilling ensures the best cook and tenderness.
  2. Our second tip is relating specifically to marinating. There’s a fine balance between allowing the flavours of the marinade to penetrate the steak, and over marinating. If you let it sit in the sauce for too long, the acids will start to toughen up the meat. We recommend letting the steak sit in the fridge in this marinade between 2 and 6 hours for optimal flavour and texture. 
  3. Our third tip is whether you’re cooking your steaks on a barbecue, stove top, or any other type of grill, let the cooktop get hot before putting your steaks on to cook. Starting to grill your steaks when the surface is not yet heated will once again result in an unevenly cooked steak, and you run the risk of over or undercooking.   
  4. Our fourth tip is to invest in a meat thermometer. This may seem skippable, but hear us out. A meat thermometer is the best and most reliable way to get your steaks to your desired state every time. Do some research on the type of steak you're cooking, and see which temperature best suits it. 
  5. Our final step is to let the steak rest before cutting and serving.This is one of the most important things you can do to make sure your steak is as good as can be. If you slice it right away, the juices leak out, lending to a dry steak. Letting your steak sit right after taking it on the grill allows it to retain its juices and moisture, which is how you get that perfect tenderness.   

 

The Best Steak Marinade

This recipe is perfect for all types of steak. Tenderloin, porterhouse, filet mignon, hanger, flank, sirloin, or any other type of steak. 

Even if you’re not the biggest fan of steak, you can still utilize the marinade in this recipe. You can switch out steak for different animal proteins such as chicken, pork, or even fish. Vegetarians, don’t fret, this versatile marinade can even go on plant based proteins! It literally goes with everything.

Ingredients


  • 1/2 bag frozen crinkle fries
  • 1 sirloin steak
  • 1/3 cup Smoke Show Jalapeno Hot Sauce
  • 1 lime, zested and juiced
  • 2 garlic cloves, chopped
  • 1 cup grated orange cheddar
  • 1/2 cup grated mozzarella
  • 2 tbs flour
  • 1 cup milk
  • 2 tbs butter

Steps


  1. To begin, put the sirloin steak in a ziplock or a Tupperware with the Smoke Show sauce, 3-4 tbs of olive oil, crushed garlic, some lime juice and the lime zest. Let the steak marinate in the fridge for 2-6 hours for best flavour and texture.
  2. Once your steak is done marinating, start by cooking the fries following the instructions on the bag.
  3. While the fries are baking, begin to make the cheese sauce. Heat a pan on medium high and melt the butter until it starts bubbling. Add the flour and mix for 1 minute. Start adding the milk little by little, whisking constantly, until the texture becomes thick and smooth. If it’s too thick, add a bit more milk.
  4. Reduce heat to medium and stir in the cheeses. Slowly stir until the cheese has completely melted. Remove from the heat, add pepper and keep warm.
  5. Heat a drizzle of oil in a pan on high heat. Cook the steak 3-4 minutes for on each side for medium rare, or cook until desired doneness. Transfer to a cutting board and rest for at least 5 minutes before slicing.
  6. To assemble your plate, add the fries, topped with the steak, then drizzle over the cheese sauce and some extra Smoke Show sauce! Enjoy!
