Breakfast Bagel with Guacamole and Jalapeno Hot Sauce

Breakfast sandwiches, when well done, are simply put: phenomenal. As big breakfast fans, and even bigger sandwich fans, we’ve created a breakfast sandwich that includes all of our favourite things. We’ve got bagels, eggs, cheese, guacamole, and a real nice hint of spice. This cheesy breakfast bagel with perfect eggs, and spicy homemade guac is definitely something worth waking up for. 



CHOOSING YOUR BAGEL:

Choosing the right bagel for your breakfast sandwich is one of the most important steps, and we’ve got you covered on where to find them. The bagel debate has been a long running one. Which city has the best ones? New Yorkers would likely argue to the ends of the earth that nothing beats a New York bagel. Los Angeles has come into the running recently, as have southern cities like Nashville and Austin. This debate however is moot. There’s one clear winner for best bagel city , and it’s Montreal, Quebec in Canada. As Montreal natives here at Smoke Show, we may be biased on this. But really, Montreal having the best bagels? That’s just a fact. This is why we’ve specified St. Viateur Bagels in our recipe for this breakfast bagel sandwich. They’re simply the best, and with so many flavours to choose from (sesame, poppy seed, plain, all dressed, rosemary, etc…), the world is your oyster! CHOOSING THE RIGHT AVOCADO:

The guacamole is one of the stand out features of this recipe. We’ve added special flavours with our Smoke Show Jalapeno Hot Sauce, some pesto, a touch of garlic and a hint of lemon. Guacamole is super easy to make, but definitely needs to be done properly. One of the most important steps of a good guacamole starts before you even make it. Choosing a ripe avocado for your guacamole is essential, otherwise it’s hard to smash up, and won’t taste right. One telltale sign of a ripe avocado is the colour. There’s usually a scale to hint at the stage of ripeness. A very green avocado is usually not yet ripe enough, so aim to go for a dark purple avocado when picking them. The next sign is the texture when you press on it. A ripe avocado will be soft, yet firm enough that it’s not mushy. Finding that balance will ensure a perfect guacamole every time. 

 

COOKING YOUR EGGS:

Another important step in perfecting your breakfast bagel is cooking your egg well. People often opt for fried eggs in their breakfast sandwiches, but we personally prefer the folded egg method. It’s similar to an omelette, where you mix the eggs prior to cooking them. They’re folded smaller to fit into the sandwich, and mid-cook the cheese goes inside and gets folded in. The cheese cooking with the eggs ensures you get that melt-y gooey deliciousness every time.

Ingredients


  • 1 St-Viateur bagel
  • 1 avocado
  • 2 eggs
  • 2 cheddar slices
  • 2 tbsp Smoke Show jalapeno hot sauce
  • 1 bunch chives and parsley
  • 1 tsp pesto
  • 1 garlic clove
  • 1/2 lemon
  • 2 tbsp mayonnaise

 

Steps


  1. Chop the garlic and herbs.
  2. Mash the avocado with the garlic, herbs, Smoke Show sauce, pesto, lemon juice, a drizzle of olive oil, salt and pepper.
  3. Whisk your eggs in a bowl. Season with salt and pepper.
  4. Heat a knob of butter in a pan on medium high heat.
  5. Add the eggs in the pan and cook for about 2-3 minutes without mixing.
  6. Add the cheddar slices and fold the eggs in half. Cook for another 2-3 minutes on each side until the eggs are no longer runny and the cheese is melting.
  7. Toast the bagel.
  8. Spread the mayo on both bagel slices then add the Smoke Show guac and the cheesy eggs.
